I think that's entirely possible to do. I have difficulty with the sweet fruits and don't eat bananas, grapes or raisins. I handle berries and citrus fruits OK, and eat tons of tomatoes.
In fact, today I was planning to do a search for fruits to find a complete list of acid, sub-acid, and sweet fruits so I can know what to pick without negative consequences.
When things need sweetening, instead of the dates most people use, I use raw agave.
I mostly eat vegetables (actually, mostly leafy greens with some vegetables), with a very small amount of fruit, perhaps a glass of fresh squeeze orange juice or a handful of berries, typically as an afternoon snack (as it's best to eat fruit on an empty stomach, so one hour before or two hours after other foods).
And don't forget you can grow your own food - we get a lot of our organic produce right out of the backyard.
