Hi there!
I was trained as a chef and mayo is easy.
1 egg yolk
your cold-pressed oil of choice
lemon juice
sea salt/pepper or other seasonings.
Put a mixing bowl on the counter with a damp cloth underneath to keep it from moving when you whisk. Put in the egg yolk.
Just whisk that egg yolk until it gains mass and turns a really light, pretty yellow. This should take a few minutes, and your arm will probably hurt. but it's ok.
Then, while continuing to whisk with one hand, add the oil slowly into the egg so it emulsifies. You'll notice this mix getting thicker.
I usually add oil until it's at the thickness I prefer. If you want to mimic hellman's, that's a lot of oil. be careful, though, the more you add, the harder it is for the yolk to sustain it. You'll be able to tell by the glossiness of the sauce.
add a squeeze of lemon juice and your s&p, then cover it and refrigerate it.
I don't know how long this will last, I usually keep things unless they become offensive.

Good Books/ Do and Eat what feels right

OK, here's what I really like about this site so far- No one "freaks out" when you say something honest that may offend their particular sensibilities. I've explored a few communities where
I truly felt some members were shunned for speaking of something that wasn't sanctioned by the site and it's extremely rigid and judgemental standars.

You will go raw at your own pace, and as your body tells you where you are and what works for you at any particular time. I went 100% raw well before I was ready (due in large part to the judgemental pressure I was experiencing from my first raw community) and was so unhappy, unsatisfied, and overwhelmed by the rigid rules I almost didn't make it. Thank goodness for a kind raw living coach who told me the most important thing was to follow my instincts.

I don't eat may anymore, but I sure liked it at one point! My body tells me when I am ready to be rid of certain foods that are not beneficial. I listen to my body.

My FAV book so far is Natalia Rose's Raw Food Life Force Energy...

I don't follow it to the letter, but it is full of wonderful, inspiring information, and she is so beautiful and amazing, you can't help but be amped to get RAW.

Dear Greenbunny:

Thanks for your reply and understanding. I will try the Manna bread.

I have a Champion juicer, but it does not do wheatgrass well. When I was drinking an ounce of wheatgrass, it made me feel so good. As for wheatgrass juicers, no hand-cranking for me. I need a suggestion on a good electric one.

I hope my opinion won't sound offensive but you won't feel the benefits of a raw diet if you keep eating pita and mayo. I love bread too but it is so clogging, I use nori sheets to roll up fillings like pesto or raw hummus, arugula pesto is awesome, blend together some soaked walnuts, a garlic clove, bunch of arugula, some cilantro, and olive oil. I roll it with avocado, cucumber, shredded carrots and scallions. It's not mayo on bread but it is amazing. Anyway what ever works for you is perfect even bread, but if you would like more recipes or ideas feel free to reply to me. I love David Wolfe's book Naked Chocolate., Happy eating Kymberly
