My understanding is that as long as the nuts and seeds are raw the enzymes ARE available. The reason for sprouting is to make them more easily digestible and for our pancreas to not have to work so hard.
I was taught that our pancreas, when working hard, enlarges. So soaking the nuts and seeds before eating means the pancreas doesn't have to work so hard, and in time, the pancreas shrinks back to normal size.
The makeup of the nuts and seeds also change from raw to when they're soaked. The percentage of fat, protien and carbs actually changes. I think it's because the nut or seed has the potential to sprout and can stay in that state for years. But when it starts sprouting (is soaked) it shifts from a potential "new life" to an actual "new life", so to speak, and requires different resources (protiens, fats, carbs) to become a new plant.
All that said, I think that even if the nuts and seeds are not sprouted before they are ground (if you're buying a packaged product, for instance) it's easier to digest than eating whole. Either way, the enzymes are availble and it's still a healthier way to eat.
