Note the section about a possible fungus in raw almonds. Maybe soaking can also "sprout" almond fungus?
According to Alissa Cohen's book (p. 278), "Almonds just need to be soaked for 1-2 days and then kept in the refrigerator in water. Change water daily. Will keep for 5-6 days." This implies that sprouting is done at room temperature (which jives with what I've read elsewhere), and stored in the refrigerator.
