This tomato, onion, and cucumber salad was great!! I really loved it and thought it was quick and easy to make.
Whole tomatoes cut into four, onion sliced small, and cucumber slices (as much as you want). It was all tossed in an italian dressing but I think a bit of olive oil and salt or vinegar would also go well. ( I really don't like onions so I didn't really eat them).

prep: peel tomatoes and cucumbers if not organic to get rid of the wax!!
