Buckwheat Breakfast

about 2/3 cup sprouted buckwheat
3 or 4 pitted dates, chopped (you can also use raisins)
1/8 cup nuts, chopped
1/2 (or more) apple, chopped
1 banana (optional), sliced
almond milk (optional)

This is a quick breakfast but you have to prepare ahead of time and have sprouted buckwheat and almond milk ready in the morning.

Put the sprouted buckwheat, dates, nuts, apple, almond milk and sliced bananas in a bowl and enjoy!

A slightly longer version is to put the buckwheat, dates, nuts and chopped apple into a food processor. Process to desired consistency. Add almond milk and sliced banana. It's so much better than cooked oatmeal!

Makes 1 serving.

To sprout buckwheat:
Purchase hulled buckwheat
Soak for at least 6 hours. Some people rinse it several times during the soaking process as it tends to get slimy.
Rinse daily and keep in cool place. I wait two days (1/4 inch tail on the sprouts) before using them.

I've read that you can soak the buckwheat and use it the next day but I normally wait for it to be fully sprouted before eating it. You can also dehydrate the sprouted buckwheat for 3 hours at 90 degrees and make a crispy cereal or a salad topping.

I hope this is the right place to post this recipe. I didn't see a grains or breakfast area...
