You need 2 tomatos, 1 big or 2 small avacados, 1 fresh red chili peper (you can have the green one which is not hot), 2 pieces of garlic, 3 pieces of green onion, 1 cup of fresh chopped coriander and 1 cup of Bulgur (this is like a crushed wheat you can find even in a normal super market).

Before starting entire process have a warm water (or boiled) and soak the bulgurs into the warm or boiled water. You can alternatively soak it overnight.

Chop all ingredients in small cubes like you make Mexican salsa. Once chopped drain the bulgur from the water and mix it together. Add salt, cumin powder, peper and add a little lemon. (dont add too much lemon this is only letting avacado preseverv its green colour). Mix them gently. dont smash it.

Here you go, you have the rice replacement. This dish in a different manner is very popular in the middle east

Just to clarify.....although this yummy salad is sometimes considered raw....Bulger wheat is not raw.
Bulger is steamed or pre-cooked, then dried, then crushed.

It is a delicious "mostly raw" recipe.
