This is one of those recipes that I have no measurements for. Each time I make it, it tastes a little different, but always yummy! The ingredients are easy to find and you can modify it to your taste.

Baby (or large ones for entree) Portabellas

Stuffing:

Spinach (a couple big handfuls)
Green Onions (one)
A handful or cup of pinenuts (can use walnuts or any other nut)
A handful or two of dried cranberries
As much cilantro as you want to taste
Braggs or other (2 tablespoons, or a couple dashes)

Blend the spinach, onions, cilantro, pinenuts, cranberries and braggs together in a food processor until you have a yummy, sticky, raw food delight...then stuff the mushrooms.

Viola!

If you want them cooked, put in the over on 350 degrees for about 20 minutes. They taste great both ways, but even my non-raw friends love them best raw.

These are absolutely delicious. I added pumpkin seeds, ground flax seeds, and about a tablespoon of Lowfat Plain Yogurt to the mixture. I placed a sun-dried tomato inside the mushroom before spreading the mixture in it. The saltiness of the pumpkin seeds balances the sweetness of the cranberries.
