Creamy Leep Dip
Well the best raw recipe I've had so far is certainly the Creamy Leek Dip. For those of you who have never before seen a leek or don't even know what one is, yes, it sounds.....not pleasant. Leek. Leak. Eek. I don't know, but to me at first it sounded like some animal living at the bottom of a swamp. But that's just me.
So before you judge the poor little leek solely based on the oddness of it's name, let me tell you the TRUTH... THEY ARE DELICIOUS! Well, I am the biggest onion fan ever alive. Seriously, an onion is my favourite veggie and I could eat them like apples .And a leek is mildly onion -y, so that might be a factor as to why I like it so much.
Also used in this recipe are macadamia nuts. Now depending on where you live and the season, they might be slightly difficult to find (at least this is true in my city). They are also really expensive, so use wisely. They look hard, but when all ground up, macadamia nuts take on a whole new level.
Ingredients:
1 1/2 cups macadamia nuts
1 sliced leek
parsley (finely chopped)
salt (to taste)
water (to desired consistency)
Blend the nuts and the leek in a food processor or high power blender. Add desired amounts of salt/water. Sprinkle the parsley and stir it in (don't blend it or the whole thing will turn green).
I've tried dipping beans, pepper, and cucumber in it so far, but probably whatever veggie makes you happy will work.
