I'm so sorry that you've been deprived of a response. About the mexican dish... I haven't found a single one that I like. I have a recipe for enchiladas but they're just not good, at all. and they're a pain to make, especially for being so unrewarding for the tastebuds.
It's for sure not easy changing your entire lifestyle, but in this case, when the road is narrow, the reward is great. That's awesome that you've decided to take your health into YOUR own hands. Power to ya!
I would also love to open up my own restaurant. Or at least own one and let someone else open it
