Do you have a dehydrator? I find that making lots of dehydrated stuff for when I'm not into preparing things is a big help.
Another nice thing to have around are pate's. They are pretty easy to make and give the feeling of solidity and a full meal.
Live food soups with a simple salad might be easier as well.
Over time you probably won't crave such complicated food as much as you do at the beginning. When making the transition from cooked food where things are heavy and complex at first you might feel like you need that. As time goes on just an avocado or a mango can become a satisfying and delicious meal.
